I recently had my friend Ziena from Muslimmomof3 feature on my instagram and she made a delicious dish called khiyariyeh bil laban which is a deconstructed version of stuffed zucchini in a yogurt sauce. It’s much easier to make and has the same flavor you crave without all the hassle of having to core and stuff the zucchini. Thanks so much Zeina for this recipe! Ingredients:
-4 large zucchini chopped.
-2 medium onions chopped.
-5 garlic cloves
-Salt
-Pepper
-1 teaspoon of seven spices
-2-3 tablespoons of dried mint
-1 32oz container of laban (plain yoghurt)
-1 container of water (equal parts yoghurt )
-3 tablespoons of cornstarch
-Vegetable oil
-1 lb ground beef
Instructions:
1.) Sauté the onions in vegetable oil. After about a minute, add in the garlic and sauté as well. Then add in salt, pepper, seven spices, and dried mint. Mix around with onions and then add chopped zucchini. Fry on high for about a minute and then lower heat. Add 1/4 cup of water and cover with lid. Cook until zucchini is tender.
2.) In a separate pot, mix one container of plain yoghurt (laban) with equal parts cold water. Mix or whisk until there is no clumps and Laban is fully dissolved with water. Then add cornstarch. Mix again till fully dissolved. Turn heat on medium and keep mixing until mixture is starting to boil. Be careful because it can easily burn if heat is too high. Yoghurt will thicken.
3.) Fry your ground beef until fully cooked. Strain meat from any juices.
4.) With out grabbing any water from zucchini pan, scoop your zucchini mixture and add to the yoghurt sauce (Laban). Add in your meat as well.
5.) Serve over some rice and Vermicelli.
