Cowboy Caviar

The perfect make-ahead, cold, fresh and easy side dish for any bbq or Tex-mex night. It comes together in no time and can last in the fridge for about 3-4 days.


3 chopped Roma tomatoes

12oz canned sweet corn

12oz canned black beans

1 red bell pepper, finely chopped

1 green bell pepper, finely chopped

2-3 limes, juiced

1 tablespoon olive oil

1 tablespoon red wine vinegar

1 teaspoon honey

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1/2 teaspoon salt

A dash of black pepper

1 tablespoon hot sauce

1/2 chopped red onion or 1/2 cup pickled red onion


1.) Combine all ingredients in a bowl and stir well.

2.) Store in the fridge in an airtight container until ready to serve. It will last 3-4 days in the fridge.
