Energy bites

Energy bites are the perfect thing to snack on when you’re feeling in a snacky mood but don’t want to ruin your diet. A perfect portion is 2-3 of these balls (depending on how big you made them.) Keep a stash in the freezer for the perfect midnight snack!

Ingredients:

-1 cup rolled oats

-1/2 cup dark chocolate chips

-2/3 cup no sugar coconut flakes or coconut flour

-1/2 cup chia seeds or flax seeds

-1/2 heaping cup peanut butter (or nut butter of choice)

-1/3 cup honey

-1 teaspoon vanilla

 

Instructions:

1.) Mix together oatmeal, chocolate, coconut flour and chia seeds together.

2.) Once dry ingredients are well incorporated, add in all remaining ingredients.

3.) Form into small 2-3 bite balls and place on a parchment paper lined sheet. Freeze for a half hour to an hour and then store in a tight sealing Tupperware in the freezer.
