If you’ve had an oatmeal chocolate chip cookie from Potbelly, you know just how addictive those cookies can be! It’s so hard to not want to buy another cookie to devour after having just the first one.
If you’re trying to replicate these (very addictive) Potbelly cookies, give this copycat recipe a go. Let me know how it turns out for you!
Ingredients:
-2.75 cups quick oats
-2 cups chocolate chips (you can use a bit more if you want EXTRA chocolatey)
-2 eggs
-1.5 teaspoons vanilla
-1 cup white sugar
-1 cup brown sugar
-1 cup butter
-2 cups all-purpose flour
-1 teaspoon salt
-2 teaspoons baking soda
Instructions:
1.) Preheat your oven to 350 degrees.
2.) Mix wet ingredients into a bowl (butter, eggs and vanilla.)
3.) Add the brown sugar and regular sugar to the bowl. Mix well!
4.) In a different bowl, mix the quick oats, baking soda, salt and flour. Again, mix well!
5.) Combine both mixtures from the 2 separate bowls into 1 bowl (i.e. the flour & oats mix should now be combined with the butter mixture.)
6.) Now for my favorite step: Add in your chocolate chips! I usually do 2 cups of chocolate chips but like I said above, you can add a bit more if you’re a chocolate maniac. You can also mix it up and add in butterscotch or white chocolate chips if you’d like!
7.) Once your dough is well stirred and everything is incorporated in really well, form small dough balls using your ice cream scooper. I usually spray it down before using so the dough doesn’t stick to the scooper.
8.) Bake these bad boys at 350 degrees for 11 or 12 minutes. I like them a little on the lighter side so I don’t ever bake for more than 11 minutes.
NOTE: Always remember that if you live in a high altitude area, you need to adjust your ingredients and temperatures! Check out craftsy’s great article on how to adjust your baking depending on where you live!
